When we make Spallacia (dry cured front leg) for our Acorn Edition program, we leave the foot and the leg on, and this is what they look like. I think it's beautiful!

I received the spallacia this afternoon. Vary impressive and delightful on the tongue.
Reminds me of bringing my firstborn home. So happy and so anxious. Where is the owners manual. Eventually we learned and the boy survived.
Here is my problem- how to care for this lovely leg.
Should I slice it up and freeze it. Hang it in the basement. Open a restaurant:)
